Roasted Bacon Brussel Sprouts

We start with fresh Brussels sprouts, roasting them to a golden crisp in a blend of Pomace olive oil and rapeseed oil. This roasting process creates a caramelised exterior with a tender centre. A sprinkle of sea salt enhances their natural sweetness and forms a perfect foundation for smoky bacon lardons.

Next, we add diced red onion for an earthy sweetness that complements the savoury bacon and balances the Brussels sprouts’ flavour.
