Sauvignon Blanc is a refreshing wine with varietal aromas. On the nose it has classic aromas of grapefruit and gooseberry with an undertone of ripe lime and smoky flint. On the palate it is supremely fresh and cuts clean with classy citrus fruits, quince and hard white peach. Depth, purity of fruit, and mouth-watering acidity. You can appreciate it with meats, seafood and goatcheeses.
Vinification
During the first stages of the wine making process, the grapes are swiftly migrated to the winery to minimize skin contact before gentle pressing into a pneumatic press. The fresh juices are traditionally fermented in stainless steel tanks for ten to fifteen days. As for ageing, the fine Jean-Paul Seguin Le Petit is left for a minimum of six months. Before being blended and bottled in the spring.
